What is sorbet?

In the sixteenth century, two Florentines argued over credit for the paternity of the recipe, but it was in the following century that a Sicilian Francesco Procopio dei Coltelli began the actual sorbet business, importing them both in Italy and abroad.
The difference with ice cream
Although both very fresh and fruit-based, sorbet differs from ice cream because it has a water base and does not contain milk. Furthermore, its consistency is not creamy like that of ice cream but grainy and semi-dense.
In past years, sorbet was served halfway through the meal to cleanse the palate between courses, but now it is served at the end of the meal to aid digestion.
